Pumpkin Chocolate Chip Cookies

1 cup shortening

2 cups white sugar

2 tsp vanilla extract

2 eggs

1 can (15 oz) pumpkin

4 cups flour

1-1/2 tsp baking soda

1-1/2 tsp baking powder

1 tsp salt

1 tsp ground cinnamon

1 pinch ground nutmeg

1 cup chocolate chips

Preheat the oven to 375 degrees. Grease cookie sheets or use parchment paper.

Cream together shortening and sugar until smooth. Beat in the eggs one at a time. Stir in the vanilla and pumpkin until well blended.

In a separate bowl, combine the flour, baking soda, baking powder, salt, cinnamon and nutmeg. Stir flour mixture into the pumpkin mixture. Add chocolate chips. Drop by teaspoonfuls onto a cookie sheet.

Bake for 13 minutes or until the edges begin to brown.
